I love cooking but I’m not your average cook. Most of all, I believe food should be made with love. I love everything about food, each large and little ritual to do with it. For me, cooking – especially baking, is one of the most profound ways a person can give pleasure.
My parents weren’t terribly into food, yet my own interest got me work as a kitchen porter and a commis chef in hotel kitchens as a teen. Here, I learnt basics like how to make a sauce, cook meat, knife skills and not be scared of cooking for large numbers of people.
Carolina Cooks For You started almost organically, beginning with requests to cater for big parties and it was set up formally in 2010. My first job was a wedding buffet for 200 – a couple of hot dishes as I remember, an aromatic chicken casserole and a big vegetarian risotto.
My passion for cake and baking has only escalated over the years, and I made a point of pursuing gluten free and vegan baking because I seemed to know more than a few complex dietary people. They complained that the selection of cake and sweet treats available to them was often lifeless and austere. I decided to learn how to make lush cakes for them. I especially love it when these cakes are so scrumptious in their own right – not just as a special diet cake!
I like to tune into the qualities of the person or people for whom a cake is made, so the cake reflects them in some way. It is that which has helped me grow, create lots of new recipes and see and feel the joy I can give.
